1 . Grease the tin and line with baking paper.
2 . Whisk the eggs and sugar with the mixer about 3 min (until white and fluffy).
3 . Add the olive oil whisk the mixture.
4 . Sift the flour and baking powder. Add the rest of the ingredients and whisk the batter.
5 . Turn on the oven 175°C .
6 . Pour the batter into the tin.
7 . Bake the cake for 50-55 min. until golden brown. (do the skewer test)
8 . Let the cake cool in the tin before removing.
This recipe belongs to my lovely friend Esra. I used to bake carrot cake a lot but after tasting her special recipe I ripped my own records. It has a rich cinnamon flavor that goes great with walnut. This snow melting recipe was one of the most memorable tastes of my Minnesotan days.
